The image you get is called a thermogram. It is a digital image processed by the camera’s system, and it shows up as different areas of colours. A different color represents a different heat range, and you can easily tell what it is you are looking at.

Cryogenically cooled cameras
These cameras are the more sophisticated of the pair, and are also often more expensive. With them, they have an internal system that is house in a special container, which cools the camera to an operational level.
The clear advantage of this type of camera is its accuracy and sensitivity. It can detect even the smallest changes in temperature, and this can help the one holding it make better calls based on the image displayed. However, the disadvantage is that it will need some time to cool down to an operating temperature, and it is not as robust as the other type of thermal imager, so it is mostly used in professional environments only.
This is the more affordable version, and it is also the more popular one. This type of camera does not have a cooling system, and is ready to work on room temperature, so it is ready to go as soon as you turn it on.
While it may not be as accurate as the other version, it is still good enough to be used around the house for security purposes or in industrial settings, and it is also more durable and is less likely to suffer damage.
